  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the lean ground turkey and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes. Drain any excess fat.
  2. Add the diced yellow onion and diced green bell pepper to the pot. Cook, stirring occasionally, until softened, about 5 minutes. Stir in the minced garlic, chili powder, ground cumin, dried oregano, and cayenne pepper, cooking for 1 minute more until fragrant.
  3. Stir in the undrained diced tomatoes, rinsed and drained black beans, and chicken broth. Bring the mixture to a simmer. Reduce heat to low, cover, and let it simmer for at least 15 minutes, stirring occasionally, to allow the flavors to meld. Season with 3/4 teaspoon salt and 1/2 teaspoon black pepper.
  4. Serve hot, garnished with shredded cheddar cheese if desired.

Notes

For an extra kick, add an additional 1/4 teaspoon of cayenne pepper. Can be served with quick rice or tortilla chips for dipping.
