Ingredients
- 1 tablespoon olive oil
- 1 pound chicken thighs (boneless, skinless)
- 0.5 teaspoon dried Italian seasoning
- 0.5 teaspoon paprika
- 0.5 teaspoon garlic powder
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 12 ounce fresh green beans (trimmed)
- 1 tablespoon fresh parsley (chopped, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a medium bowl, toss chicken thighs with 1 tablespoon olive oil, dried Italian seasoning, paprika, garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until evenly coated.
- On a large baking sheet or in an oven-safe skillet, arrange the seasoned chicken thighs in a single layer. Add trimmed fresh green beans to the same pan.
- Roast for 15-20 minutes, or until chicken is cooked through (internal temperature of 165°F) and green beans are tender-crisp. If desired, you can broil for the last 1-2 minutes for extra crispiness.
- Garnish with chopped fresh parsley before serving.
Notes
For a bit of heat, add a pinch of red pepper flakes to the seasoning mix. This is excellent paired with a simple side salad if you desire more greens.
