One-Dish Roasted Potatoes and Apples with Chicken Sausage

  1. Preheat oven to 425 °F. Cut red potatoes into chunks, place in 2-quart baking dish.
  2. Drizzle with canola oil.
  3. Toss to coat.
  4. Roast red potatoes in oven for about 20 minutes.
  5. While red potatoes are roasting, cut red apples and yellow onion into chunks, and chicken herb link sausages into 1/2-inch slices.
  6. Remove baking dish from oven and reduce heat to 375 °F. Add all remaining ingredients (red apples, yellow onion, chicken herb link sausages, cider vinegar, ground mustard, honey) to baking dish and toss.
  7. Return baking dish to oven and roast an additional 30 minutes until red apples and red potatoes are tender.
