Ingredients
- 1 pound red potatoes (cut into chunks)
- 1 tablespoon canola oil
- 2 red apples (cut into chunks)
- 1 yellow onion (cut into chunks)
- 12 ounce chicken herb link sausages (cut into 1/2-inch slices)
- 2 tablespoon cider vinegar
- 0.5 teaspoon ground mustard
- 1 tablespoon honey
Instructions
- Preheat oven to 425 °F. Cut red potatoes into chunks, place in 2-quart baking dish.
- Drizzle with canola oil.
- Toss to coat.
- Roast red potatoes in oven for about 20 minutes.
- While red potatoes are roasting, cut red apples and yellow onion into chunks, and chicken herb link sausages into 1/2-inch slices.
- Remove baking dish from oven and reduce heat to 375 °F. Add all remaining ingredients (red apples, yellow onion, chicken herb link sausages, cider vinegar, ground mustard, honey) to baking dish and toss.
- Return baking dish to oven and roast an additional 30 minutes until red apples and red potatoes are tender.
