Oaxacan Poblano Chicken

  1. Season the sliced chicken breast evenly with 1/2 teaspoon of the salt, 1/4 teaspoon of the black pepper, the ancho chili powder, and the smoked paprika.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and sear for 4 to 5 minutes until lightly browned and cooked through to an internal temperature of 165 degrees Fahrenheit. Transfer the chicken to a plate.
  3. In the same skillet, add the sliced poblano peppers, red bell pepper, and yellow onion. Sauté for 4 minutes until the vegetables begin to soften and char slightly.
  4. Stir in the minced garlic, dried oregano, and the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper, cooking for 1 minute until fragrant.
  5. Pour in the can of fire-roasted diced tomatoes with their juices, bring to a gentle simmer, and return the cooked chicken to the skillet. Simmer together for 3 minutes until the sauce slightly thickens and everything is hot.
  6. Warm the corn tortillas in a dry pan or microwave. Garnish the skillet with chopped fresh cilantro and serve two warm tortillas per plate alongside the chicken and peppers.
