- 1 tablespoon olive oil
- 1.5 pound ground beef (lean)
- 1 yellow onion (medium, diced)
- 3 clove garlic (minced)
- 1.5 teaspoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 0.25 teaspoon cayenne pepper
- 1 can tomato sauce (15 ounce)
- 0.25 cup beef broth
- 1.5 teaspoon unsweetened cocoa powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 cup white rice (uncooked)
- 3 radishes (thinly sliced)
- 1 avocado (large, diced)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Cook the 2 cups of white rice according to package directions, or in a rice cooker, while you prepare the beef.
- Heat 1 tablespoon of olive oil in a large skillet or pot over medium-high heat. Add the 1 1/2 pounds of ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes.
- Drain any excess fat. Add the 1 medium yellow onion and cook until softened, about 3-4 minutes. Stir in the 3 cloves of minced garlic and cook for another 1 minute until fragrant.
- Stir in the 1 1/2 teaspoons of chili powder, 1 teaspoon of ground cumin, 1/2 teaspoon of dried oregano, and 1/4 teaspoon of cayenne pepper (if using). Cook for 1 minute, stirring constantly.
- Pour in the 1 (15 ounce) can of tomato sauce and 1/4 cup of beef broth. Stir in the 1 1/2 teaspoons of unsweetened cocoa powder. Bring to a simmer, then reduce heat to medium-low and cook for 5-7 minutes, allowing flavors to meld. Season with salt and black pepper to taste.
- Serve the Oaxacan-inspired ground beef mixture over the cooked white rice. Garnish with thinly sliced radishes, diced avocado, and fresh chopped cilantro, if desired.
