Instructions

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon honey, 1 teaspoon sweet paprika, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon ground turmeric, 3/4 teaspoon salt, 1/4 teaspoon black pepper, and the freshly squeezed lemon juice.
  3. Place the cubed butternut squash, sliced zucchini, and red onion wedges onto the prepared baking sheet. Drizzle with half of the spice and oil mixture, tossing until evenly coated, then spread into a single layer.
  4. Toss the bite-sized chicken breast pieces with the remaining half of the spice mixture, then scatter the chicken evenly among the vegetables on the baking sheet.
  5. Roast in the preheated oven for 22 to 25 minutes, stirring once halfway through, until the squash is tender when pierced with a fork and the chicken reaches an internal temperature of 165°F.
  6. Remove from the oven, garnish with 1/4 cup finely chopped fresh parsley, and serve hot.
