  1. Pick through the dry red beans to remove bad beans; rinse thoroughly.
  2. In a large pot combine the red beans, water, onion, celery, and bay leaf.
  3. Bring to a boil; reduce heat.
  4. Cover and cook over low heat for about 1 hour 30 minutes or until beans are tender.
  5. Stir.
  6. Use a spoon to mash the beans against the side of the pot.
  7. Add green bell pepper, garlic, parsley, thyme, salt, and black pepper.
  8. Cook, uncovered, over low heat until creamy, about 30 minutes.
  9. Remove bay leaves.
  10. Serve with hot cooked brown rice, if desired.
