Ingredients
- 1 pound red beans (dry)
- 8 cup water
- 1.5 cup onion (chopped)
- 1 cup celery (chopped)
- 4 bay leaves
- 1 cup green bell pepper (chopped)
- 3 tablespoon garlic (chopped)
- 3 tablespoon parsley (chopped)
- 2 teaspoon thyme (dried, crushed)
- 1 teaspoon salt
- 1 teaspoon black pepper (ground)
Instructions
- Pick through the dry red beans to remove bad beans; rinse thoroughly.
- In a large pot combine the red beans, water, onion, celery, and bay leaf.
- Bring to a boil; reduce heat.
- Cover and cook over low heat for about 1 hour 30 minutes or until beans are tender.
- Stir.
- Use a spoon to mash the beans against the side of the pot.
- Add green bell pepper, garlic, parsley, thyme, salt, and black pepper.
- Cook, uncovered, over low heat until creamy, about 30 minutes.
- Remove bay leaves.
- Serve with hot cooked brown rice, if desired.
