Mushroom Steak Fajitas

Ingredients
- 12 ounce sirloin steak (boneless, about 3/4-inch thick)
- 3 cup cremini mushrooms (sliced)
- 1 tablespoon no-salt fiesta lime seasoning (divided)
- 1 tablespoon olive oil
- 1 cup green bell pepper (sliced into strips)
- 1 red bell pepper (medium, sliced into strips)
- 1 yellow bell pepper (medium, sliced into strips)
- 8 whole-wheat tortillas (6-inch)
- 1 tomato (medium, diced)
- 2 cup iceberg lettuce (shredded)
- 4 tablespoon sour cream (non-fat)
Instructions
- Slice beef across the grain into 1/4-inch strips.
- Place sirloin steak in a medium bowl with 1/2 tablespoon fiesta lime seasoning; toss to coat.
- Place cremini mushrooms, green bell pepper, red bell pepper, yellow bell pepper and remaining fiesta lime seasoning in a large bowl; toss to coat.
- Heat olive oil in large, non-stick skillet.
- Add sirloin steak strips; cook about 3 to 4 minutes.
- Remove sirloin steak from skillet.
- Place coated vegetables (cremini mushrooms, green bell pepper, red bell pepper, yellow bell pepper) in skillet and sauté until vegetables are slightly tender, about 5 to 8 minutes.
- Add sirloin steak back to skillet and sauté mixture 1 to 2 more minutes.
- Assemble fajitas by dividing beef-vegetable mixture evenly on each whole-wheat tortilla, top with tomato, iceberg lettuce, and sour cream and roll up.
Notes
Serving Suggestions: Serve with a glass of non-fat milk and side of mango chunks.
