Moroccan-Spiced Chicken Skewers with Cucumber Salad

  1. In a medium bowl, combine the 1 1/2 pounds chicken breast pieces, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon ground coriander, 1/4 teaspoon cayenne pepper (if using), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat evenly. Thread the chicken onto metal or wooden skewers.
  2. Heat 1 tablespoon olive oil in a large skillet or grill pan over medium-high heat. Cook the chicken skewers for 3-4 minutes per side, or until cooked through and lightly charred. (If using wooden skewers, soak them in water for 20 minutes prior to prevent burning.)
  3. While chicken cooks, prepare the salad: In a separate bowl, combine the 1 medium diced cucumber, 1 1/2 cups halved cherry tomatoes, 2 tablespoons fresh lemon juice, and 1 tablespoon chopped fresh parsley. Toss gently.
  4. Serve the Moroccan-spiced chicken skewers immediately with the fresh cucumber and tomato salad.

Notes

Chicken can be grilled outdoors or cooked in a grill pan indoors. Adjust cayenne pepper to your preferred spice level.
