- 4 ounce chicken breast (boneless, skinless, cut into 1-inch cubes)
- 1 tablespoon olive oil
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 0.25 teaspoon smoked paprika
- 0.25 teaspoon garlic powder
- 0.125 teaspoon turmeric powder
- 0.25 teaspoon kosher salt
- 0.125 teaspoon black pepper
- 1 tablespoon lemon juice (fresh)
- 0.25 cup instant couscous
- 0.5 cup boiling water or chicken broth
- 0.5 tablespoon fresh parsley (chopped, for couscous)
- 0.25 cucumber (diced)
- 0.25 Roma tomato (diced)
Instructions
- In a bowl, toss 4 ounces chicken breast cubes with 1/2 tablespoon olive oil, 1/2 teaspoon ground cumin, 1/2 teaspoon ground coriander, 1/4 teaspoon smoked paprika, 1/4 teaspoon garlic powder, 1/8 teaspoon turmeric powder, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper. Let marinate for at least 10 minutes while preparing other components.
- While chicken marinates, prepare the couscous: Place 1/4 cup instant couscous in a small bowl. Pour 1/2 cup boiling water or chicken broth over it, cover, and let stand for 5 minutes. Fluff with a fork and stir in 1/2 tablespoon chopped fresh parsley and 1 tablespoon fresh lemon juice. Set aside.
- Preheat an indoor grill pan or broiler to medium-high heat. Thread marinated chicken onto 1-2 small skewers.
- Cook skewers for 4-5 minutes per side, or until chicken is cooked through and lightly charred.
- While skewers cook, combine 1/4 each diced cucumber and 1/4 each diced Roma tomato in a small bowl for a simple salad.
- Serve the Moroccan spiced chicken skewers alongside the lemon herb couscous and cucumber tomato salad.
Notes
Soaking wooden skewers in water for 15 minutes before use prevents them from burning.
