Moroccan-Spiced Chicken Skewers

  1. In a medium bowl, combine 1 pound chicken breast cubes, 1 tablespoon olive oil, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon ground coriander, 1/4 teaspoon ground turmeric, cayenne pepper (if using), salt, black pepper, 2 minced garlic cloves, and 1/2 lemon juice. Toss to coat evenly. Thread the chicken onto metal or wooden skewers (if using wooden skewers, soak them in water for 15 minutes prior to prevent burning).
  2. Heat a large skillet or grill pan over medium-high heat. Add skewers and cook for 3-4 minutes per side, turning frequently, until chicken is cooked through and lightly charred. This should take about 12-15 minutes total.
  3. While the chicken cooks, prepare the couscous: In a small bowl, combine 1 cup quick-cooking couscous with 1 cup hot water or chicken broth. Cover and let stand for 5 minutes, then fluff with a fork.
  4. Also, prepare the salad: In a separate small bowl, combine 1 cup cherry tomatoes, 1/2 English cucumber, and 2 tablespoons chopped fresh parsley. Drizzle with 1 tablespoon olive oil and 1 tablespoon lemon juice. Season with a pinch of salt and pepper and toss gently.
  5. Serve the Moroccan-Spiced Chicken Skewers immediately with the fluffy couscous and tomato-cucumber salad.

Notes

If you don't have skewers, you can cook the chicken pieces directly in the pan until cooked through and nicely browned.
