Ingredients
- 1 pound chicken breast (boneless, skinless, cut into 1-inch cubes)

- 1 teaspoon ground cumin
- 1 teaspoon paprika

- 1 cup quick-cooking couscous
- 1 cup water (hot)
- 1 cup cherry tomatoes (halved)
- 0.5 English cucumber (diced)
- 2 tablespoon fresh parsley (chopped)
- 1 tablespoon lemon juice
Instructions
- In a medium bowl, combine 1 pound chicken breast cubes, 1 tablespoon olive oil, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon ground coriander, 1/4 teaspoon ground turmeric, cayenne pepper (if using), salt, black pepper, 2 minced garlic cloves, and 1/2 lemon juice. Toss to coat evenly. Thread the chicken onto metal or wooden skewers (if using wooden skewers, soak them in water for 15 minutes prior to prevent burning).
- Heat a large skillet or grill pan over medium-high heat. Add skewers and cook for 3-4 minutes per side, turning frequently, until chicken is cooked through and lightly charred. This should take about 12-15 minutes total.
- While the chicken cooks, prepare the couscous: In a small bowl, combine 1 cup quick-cooking couscous with 1 cup hot water or chicken broth. Cover and let stand for 5 minutes, then fluff with a fork.
- Also, prepare the salad: In a separate small bowl, combine 1 cup cherry tomatoes, 1/2 English cucumber, and 2 tablespoons chopped fresh parsley. Drizzle with 1 tablespoon olive oil and 1 tablespoon lemon juice. Season with a pinch of salt and pepper and toss gently.
- Serve the Moroccan-Spiced Chicken Skewers immediately with the fluffy couscous and tomato-cucumber salad.
Notes
If you don't have skewers, you can cook the chicken pieces directly in the pan until cooked through and nicely browned.
