Moroccan Harira with Rustic Bread

  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium heat. Add the finely chopped yellow onion, diced carrots, and diced celery. Cook, stirring occasionally, until softened, about 8-10 minutes.
  2. Stir in the minced garlic, ground ginger, ground cumin, ground turmeric, and cinnamon. Cook for 1 minute more until fragrant.
  3. Add the undrained diced tomatoes, rinsed brown lentils, rinsed chickpeas, and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 40 minutes, or until the lentils are tender.
  4. Stir in the chopped fresh cilantro and chopped fresh parsley. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, adjusting to taste. Cook for another 5 minutes.
  5. Serve hot, garnished with a squeeze of fresh lemon juice if desired, alongside slices of rustic bread.

Notes

For a thicker soup, you can mash a portion of the lentils and chickpeas against the side of the pot with a spoon.
