Ingredients
- 1 pound raw large shrimp (peeled, deveined, tails removed)
- 1 package white rice (pre-cooked microwave pouch)
- 1 can black beans (rinsed and drained)
- 0.25 cup orange juice (fresh)
- 2 tablespoon lime juice (freshly squeezed)
- 2 tablespoon olive oil
- 0.5 teaspoon dried oregano
- 0.5 teaspoon ground cumin
- 0.75 teaspoon salt
- 2 tablespoon fresh flat-leaf parsley (finely chopped)
Instructions
- Whisk together the orange juice, lime juice, dried oregano, ground cumin, 1/2 teaspoon of the salt, and 1 tablespoon of the olive oil in a small bowl.
- Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the raw large shrimp in a single layer and cook for 2 minutes.
- Pour the citrus sauce over the shrimp and simmer for 3 minutes, stirring gently until the shrimp turn pink, opaque, and cooked through.
- Meanwhile, heat the drained black beans in a small saucepan over medium heat with the remaining 1/4 teaspoon salt for 3 minutes. Warm the white rice pouch in the microwave according to package instructions.
- Divide the warm rice and black beans between two plates, top with the mojo shrimp and pan citrus juices, and sprinkle with fresh flat-leaf parsley.
Notes
