- 1 pound ground turkey (lean)

Instructions
- In a medium saucepan, combine white rice and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, until liquid is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.
- Meanwhile, heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Add red onion and minced garlic to the skillet with the turkey. Cook for 3-4 minutes, until onion is softened.
- Stir in chopped fresh mint, 3 tablespoons lime juice, ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1-2 minutes, stirring to combine the flavors.
- Once rice is ready, fluff with a fork and stir in 1/4 cup fresh cilantro and 1 tablespoon lime juice.
- Serve the mojito ground turkey mixture over the cilantro-lime rice.
Notes
Using lean ground turkey helps keep the dish light. Adjust the amount of mint and lime to your personal preference for a stronger 'mojito' flavor.
