  1. Cook buckwheat soba noodles in a large pot of boiling water for 5 minutes until tender, then drain, rinse with cool water to halt cooking, and divide evenly among 6 soup bowls.
  2. In a separate large pot, bring the 6 cups of water, grated fresh ginger, gluten-free tamari, and broccoli florets to a gentle simmer over medium heat for 4 minutes until the broccoli is bright green and just tender.
  3. Ladle 1/2 cup of the hot broth into a small bowl, whisk in the yellow miso paste until completely dissolved and smooth, then pour the mixture back into the pot over low heat without letting it boil.
  4. Gently stir in the cubed extra-firm tofu and toasted sesame oil, warming for 2 minutes until the tofu is heated through.
  5. Ladle the hot broth, vegetables, and tofu over the prepared noodles in each bowl, and garnish with sliced green onions before serving.

Notes

Be sure to use 100% pure buckwheat noodles to ensure the dish remains completely wheat- and gluten-free.
