Ingredients
- 2 salmon fillets (6 ounce, skin on or off)
- 1 tablespoon white miso paste
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 0.5 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 1 cup quick-cooking brown rice (uncooked)
- 1 cup frozen broccoli florets
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Pat the salmon fillets dry. In a small bowl, whisk together 1 tablespoon white miso paste, 1 tablespoon soy sauce, 1 tablespoon mirin, and 1/2 tablespoon brown sugar until smooth. Set aside.
- Cook 1 cup quick-cooking brown rice according to package directions. Simultaneously, steam 1 cup frozen broccoli florets, either in the microwave or a steamer basket, until tender-crisp.
- Heat 1 tablespoon vegetable oil in a non-stick skillet over medium-high heat. Season the salmon fillets with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Place salmon skin-side down (if applicable) in the hot skillet and sear for 4-5 minutes until the skin is crispy.
- Flip the salmon fillets and cook for another 2-3 minutes, or until nearly cooked through. Pour the miso glaze over the salmon and cook for 1-2 minutes more, spooning the glaze over the fillets until they are cooked through and the glaze has thickened slightly.
