Ingredients
- 0.5 pound beef sirloin (thinly sliced)
- 1 cup low sodium beef broth
- 0.5 cup mirin
- 1 tablespoon low sodium soy sauce
- 1 yellow onion (medium, sliced thin)
- 0.5 teaspoon granulated sugar
- 0.5 cup brown rice (uncooked)
- 0.5 pound fresh green beans (trimmed)
Instructions
- Cook the brown rice according to package instructions.
- In a medium skillet, combine the low sodium beef broth, mirin, low sodium soy sauce, and granulated sugar. Bring the mixture to a simmer over medium-high heat.
- Add the sliced yellow onion to the simmering broth and cook for about 5 minutes until soft.
- Add the thinly sliced beef sirloin to the skillet. Cook gently for 3 to 5 minutes, ensuring the meat is cooked through but tender, absorbing the broth slightly. Do not overcook.
- While the beef is simmering, steam the fresh green beans until tender-crisp, about 5 to 7 minutes.
- Serve the Mirin-Simmered Beef and Onion mixture over the brown rice and plate the steamed fresh green beans alongside the bowls.
Notes
You can use flank steak instead of sirloin if you prefer; just make sure it is cut thinly against the grain for maximum tenderness. If you want less liquid, continue simmering the sauce gently before adding the beef.
