Mini Turkey Meatloaves

Individual portion meatloaves made with lean ground turkey, baked to perfection, and served with fluffy instant mashed potatoes and simple steamed carrots.

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the ground turkey, breadcrumbs, milk, egg, 2 tablespoons of ketchup, Worcestershire sauce, salt, black pepper, and finely chopped yellow onion. Mix gently until just combined (do not overmix).
  3. Divide the mixture into 4 equal portions and shape each into a small, oval meatloaf. Place on the prepared baking sheet. Top each mini meatloaf with a small amount of additional ketchup.
  4. Bake for 15-20 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
  5. While the meatloaves bake, prepare the instant mashed potatoes according to package directions. Steam the baby carrots until tender-crisp, about 5-7 minutes.
  6. Serve the mini turkey meatloaves with mashed potatoes and steamed carrots.

Notes

You can add a touch of dried Italian seasoning to the meatloaf mixture for extra flavor if desired. Cooked meatloaves can be frozen for up to 2 months.
