Ingredients
- 1 pound ground turkey
- 0.25 cup breadcrumbs
- 0.25 cup milk
- 1 egg (large)
- 2 tablespoon ketchup
- 1 teaspoon Worcestershire sauce
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup yellow onion (finely chopped)
- 4 instant mashed potatoes (prepared according to package directions)
- 2 cup baby carrots (steamed)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the ground turkey, breadcrumbs, milk, egg, 2 tablespoons of ketchup, Worcestershire sauce, salt, black pepper, and finely chopped yellow onion. Mix gently until just combined (do not overmix).
- Divide the mixture into 4 equal portions and shape each into a small, oval meatloaf. Place on the prepared baking sheet. Top each mini meatloaf with a small amount of additional ketchup.
- Bake for 15-20 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
- While the meatloaves bake, prepare the instant mashed potatoes according to package directions. Steam the baby carrots until tender-crisp, about 5-7 minutes.
- Serve the mini turkey meatloaves with mashed potatoes and steamed carrots.
Notes
You can add a touch of dried Italian seasoning to the meatloaf mixture for extra flavor if desired. Cooked meatloaves can be frozen for up to 2 months.
