Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 yellow onion (finely chopped)
- 2 clove garlic (minced)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.5 teaspoon paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 1 can chickpeas (15 ounces, rinsed and drained)
- 1 can diced tomatoes (14.5 ounces, undrained)
- 1 cup chicken broth
- 1 cup quick-cook couscous (uncooked)
- 1 English cucumber (diced)
- 1 cup cherry tomatoes (halved)
- 2 tablespoon fresh parsley (chopped)
- 1 lemon (juiced)
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
- Add the finely chopped yellow onion and minced garlic to the skillet. Cook for 2-3 minutes, until softened.
- Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Add the rinsed chickpeas, undrained diced tomatoes, and chicken broth. Bring to a simmer, then reduce heat to medium-low and cook for 5 minutes, allowing flavors to meld.
- While the beef mixture simmers, prepare the quick-cook couscous according to package directions. In a small bowl, combine the diced English cucumber, halved cherry tomatoes, and half of the chopped fresh parsley (if using). Drizzle with lemon juice and toss gently.
- Divide the prepared couscous among four bowls. Top with the spiced chickpea and beef mixture. Serve with the fresh cucumber-tomato salad on the side. Garnish with remaining fresh parsley, if desired.
Notes
A dollop of plain Greek yogurt can be a refreshing addition to these bowls. For added convenience, buy pre-chopped cucumber and cherry tomatoes.
