Middle Eastern Spiced Chickpea & Beef Bowls

  1. Heat olive oil in a large skillet or pot over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  2. Add the finely chopped yellow onion and minced garlic to the skillet. Cook for 2-3 minutes, until softened.
  3. Stir in the ground cumin, ground coriander, paprika, salt, and black pepper. Add the rinsed chickpeas, undrained diced tomatoes, and chicken broth. Bring to a simmer, then reduce heat to medium-low and cook for 5 minutes, allowing flavors to meld.
  4. While the beef mixture simmers, prepare the quick-cook couscous according to package directions. In a small bowl, combine the diced English cucumber, halved cherry tomatoes, and half of the chopped fresh parsley (if using). Drizzle with lemon juice and toss gently.
  5. Divide the prepared couscous among four bowls. Top with the spiced chickpea and beef mixture. Serve with the fresh cucumber-tomato salad on the side. Garnish with remaining fresh parsley, if desired.

Notes

A dollop of plain Greek yogurt can be a refreshing addition to these bowls. For added convenience, buy pre-chopped cucumber and cherry tomatoes.
