  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced yellow onion and cook until softened, about 3 minutes.
  2. Add the ground pork to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in the minced garlic, chili powder, ground cumin, dried oregano, and optional cayenne pepper. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and stir well, scraping up any browned bits from the bottom of the pan. Season with 1 1/2 teaspoons of salt and 3/4 teaspoon of black pepper. Bring to a simmer and cook for 5 minutes until slightly reduced.
  5. While the pork simmers, warm the tortillas according to package directions (microwave, oven, or skillet).
  6. Serve the seasoned pork in warm tortillas with your favorite toppings such as shredded lettuce, store-bought salsa, and sour cream.

Notes

Leftovers are excellent for lunch the next day; simply reheat the pork and assemble fresh tacos.
