Ingredients
- 1.5 pound ground pork
- 1 tablespoon olive oil
- 1 yellow onion (diced)
- 2 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 0.25 teaspoon cayenne pepper
- 0.5 cup chicken broth
- 1.5 teaspoon salt
- 0.75 teaspoon black pepper
- 12 tortillas (small)
- 1 cup shredded lettuce
- 0.75 cup salsa
- 0.5 cup sour cream
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced yellow onion and cook until softened, about 3 minutes.
- Add the ground pork to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the minced garlic, chili powder, ground cumin, dried oregano, and optional cayenne pepper. Cook for 1 minute until fragrant.
- Pour in the chicken broth and stir well, scraping up any browned bits from the bottom of the pan. Season with 1 1/2 teaspoons of salt and 3/4 teaspoon of black pepper. Bring to a simmer and cook for 5 minutes until slightly reduced.
- While the pork simmers, warm the tortillas according to package directions (microwave, oven, or skillet).
- Serve the seasoned pork in warm tortillas with your favorite toppings such as shredded lettuce, store-bought salsa, and sour cream.
Notes
Leftovers are excellent for lunch the next day; simply reheat the pork and assemble fresh tacos.
