Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (lean)
- 1 yellow onion (small, diced)
- 2 tablespoon taco seasoning mix
- 1 can black beans (rinsed and drained)
- 1 cup frozen corn
- 2 package pre-cooked brown rice
- 0.5 cup fresh salsa
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and yellow onion, breaking up the beef with a spoon. Cook until the beef is browned and the onion is softened, about 6-8 minutes. Drain any excess grease.
- Stir in the taco seasoning mix, black beans, and frozen corn. Cook for another 5-7 minutes, stirring occasionally, until everything is heated through.
- While the beef mixture cooks, prepare the pre-cooked brown rice according to package directions (usually microwave for 90 seconds per pouch).
- Divide the brown rice among four bowls. Top with the Mexican ground beef mixture. Serve with fresh salsa and a sprinkle of fresh cilantro, if desired.
Notes
You can customize these bowls with your favorite toppings like sliced avocado, shredded lettuce, or a dollop of Greek yogurt for extra creaminess.
