Ingredients
- 1.5 cup white rice (uncooked)
- 3.5 cup water
- 1 pound ground beef (lean 90/10)
- 1 yellow onion (medium, chopped)
- 1 package taco seasoning
- 1 can black beans (rinsed and drained)
- 1 can corn (drained)
- 0.5 cup cheddar cheese (shredded)
- 0.5 cup salsa
- 0.25 cup sour cream
- 0.25 cup fresh cilantro (chopped)
Instructions
- Cook the white rice: Combine 1 1/2 cups white rice and 3 cups water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Keep covered and set aside.
- While rice cooks, heat a large skillet over medium-high heat. Add the ground beef and chopped yellow onion. Cook, breaking up the beef with a spoon, until the beef is browned and the onion is softened, about 8-10 minutes. Drain any excess fat.
- Stir in the taco seasoning packet and 1/2 cup water. Bring to a simmer and cook for 5 minutes, or until the sauce thickens.
- To serve, create a 'build-your-own' bar with the cooked rice, seasoned ground beef, rinsed black beans, drained corn, shredded cheddar cheese, salsa, sour cream, and chopped fresh cilantro. Allow family members to assemble their own bowls with their favorite components.
