  1. Heat olive oil in a large skillet over medium-high heat. Add diced yellow onion, red bell pepper, and green bell pepper; cook for 5 minutes until softened.
  2. Add ground beef to the skillet, breaking it up with a spoon, and cook for 6 to 8 minutes until browned and cooked through.
  3. Stir in chili powder, ground cumin, garlic powder, dried oregano, and salt. Cook for 1 minute until fragrant.
  4. Add diced tomatoes and black beans. Bring to a gentle simmer and cook for 5 minutes to let the flavors meld.
  5. Prepare frozen cauliflower rice according to package directions. Stir lime juice into the beef and vegetable skillet.
  6. Divide cauliflower rice among 6 bowls, top with the beef and black bean mixture, and garnish with fresh cilantro before serving.

Notes
