- 0.5 cup feta cheese (crumbled, light)
- 1 cucumber (large, diced)
- 1 cup cherry tomatoes (halved)
- 0.5 red bell pepper (thinly sliced)
- 5 whole wheat tortillas (large)
- 5 ounce mixed salad greens
- 0.25 cup balsamic vinaigrette dressing (light)
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 0.25 teaspoon salt
Instructions
- In a medium bowl, combine 1/2 cup crumbled light feta cheese, 1 diced cucumber, 1 cup halved cherry tomatoes, and 0.5 thinly sliced red bell pepper. Add 1 tablespoon olive oil, 1 teaspoon dried oregano, and 1/4 teaspoon salt. Stir gently to combine.
- Lay out the 5 large whole wheat tortillas. Divide the cheese and vegetable mixture evenly among the tortillas, placing it slightly off-center.
- Roll up each tortilla tightly to form a wrap.
- In a separate bowl, toss 5 ounces mixed salad greens with 1/4 cup light balsamic vinaigrette dressing.

Notes
For quicker prep, pre-chopped vegetables can be purchased. Adjust the amount of feta to your family's preference. Can add other veggies you have on hand.
