  1. In a medium bowl, combine 1/2 cup crumbled light feta cheese, 1 diced cucumber, 1 cup halved cherry tomatoes, and 0.5 thinly sliced red bell pepper. Add 1 tablespoon olive oil, 1 teaspoon dried oregano, and 1/4 teaspoon salt. Stir gently to combine.
  2. Lay out the 5 large whole wheat tortillas. Divide the cheese and vegetable mixture evenly among the tortillas, placing it slightly off-center.
  3. Roll up each tortilla tightly to form a wrap.
  4. In a separate bowl, toss 5 ounces mixed salad greens with 1/4 cup light balsamic vinaigrette dressing.
  5. Serve the Mediterranean Veggie & Cheese Wraps alongside the Greek salad.

Notes

For quicker prep, pre-chopped vegetables can be purchased. Adjust the amount of feta to your family's preference. Can add other veggies you have on hand.
