Mediterranean Turkey Skillet

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Push turkey to one side of the skillet. Add diced yellow onion to the other side and cook until softened, about 3-4 minutes. Add minced garlic and dried oregano, cooking for another minute until fragrant.
  3. Stir the turkey and vegetables together. Add canned diced tomatoes, chicken broth, uncooked white rice, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is cooked and liquid is absorbed.
  4. Remove from heat and let stand, covered, for 5 minutes. Stir in halved cherry tomatoes before serving. Fluff with a fork.
