Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey (lean)
- 1 yellow onion (medium, diced)
- 3 clove garlic (minced)
- 1 teaspoon dried oregano
- 14.5 ounce diced tomatoes (undrained)
- 0.5 cup chicken broth
- 1 cup white rice
- 1 cup cherry tomatoes (halved)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Push turkey to one side of the skillet. Add diced yellow onion to the other side and cook until softened, about 3-4 minutes. Add minced garlic and dried oregano, cooking for another minute until fragrant.
- Stir the turkey and vegetables together. Add canned diced tomatoes, chicken broth, uncooked white rice, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is cooked and liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes. Stir in halved cherry tomatoes before serving. Fluff with a fork.
