  1. Season the turkey breast cutlets evenly on both sides with 3/4 teaspoon of the kosher salt, 1/4 teaspoon of the black pepper, and the dried oregano.
  2. In a medium bowl, combine the diced English cucumber, halved cherry tomatoes, chopped fresh dill, crumbled feta cheese, half of the lemon juice, 1 tablespoon of the olive oil, and the remaining 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper. Toss gently to combine and set aside.
  3. Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the turkey cutlets in a single layer and sear for 3 to 4 minutes per side until golden brown and the internal temperature reaches 165°F on an instant-read thermometer. Transfer the turkey to a warm serving plate.
  4. Reduce the heat to medium, add the minced garlic to the skillet, and cook for 30 seconds until fragrant. Pour in the low-sodium chicken broth, lemon zest, and remaining lemon juice, scraping up any browned bits from the bottom of the pan. Simmer for 2 minutes until slightly reduced.
  5. Spoon the warm lemon pan sauce over the turkey cutlets and serve immediately alongside the chilled cucumber-tomato salad.

Notes

Pounding the cutlets to an even 1/4-inch thickness ensures rapid, uniform cooking without drying out the lean meat.
