Mediterranean Turkey & Chickpea Hash

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and cook, breaking it up, until browned, about 5 minutes. Drain any excess fat.
  2. Add 1 small diced yellow onion to the skillet and cook until softened, about 3 minutes.
  3. Stir in 2 cups cooked chickpeas, 4 cups chopped kale, 1 tablespoon fresh lemon juice, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, and 1/4 cup water. Cook for 5-7 minutes, stirring occasionally, until kale is tender-crisp.
  4. Divide the hash among 4 bowls. Garnish with 2 tablespoons chopped fresh parsley.
