Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a medium bowl, flake the drained tuna. Add almond flour, fresh parsley, finely minced red onion, 1 tablespoon fresh lemon juice, 1/2 teaspoon smoked paprika, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix until just combined.
- Form the mixture into 4 patties.
- Toss the trimmed asparagus with 1 tablespoon olive oil, a pinch of salt, and pepper on the prepared baking sheet. Roast for 10-12 minutes, or until tender-crisp.
- While asparagus roasts, heat the remaining 1 tablespoon olive oil in a large non-stick skillet over medium heat. Carefully place the tuna patties in the skillet and cook for 3-4 minutes per side, until golden brown and heated through.
- For the dressing, combine roasted red bell pepper, 1 clove garlic, 1 tablespoon fresh lemon juice, 1 teaspoon olive oil, a pinch of salt, and black pepper in a small food processor or blender. Blend until smooth.
- Serve the tuna patties with roasted asparagus, drizzled with the red pepper dressing.
Notes
Ensure canned tuna is packed in water for a lighter option and fully drained to prevent soggy patties. Almond flour acts as a binding agent and keeps the patties Whole30 compliant.
