  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, flake the drained tuna. Add almond flour, fresh parsley, finely minced red onion, 1 tablespoon fresh lemon juice, 1/2 teaspoon smoked paprika, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix until just combined.
  3. Form the mixture into 4 patties.
  4. Toss the trimmed asparagus with 1 tablespoon olive oil, a pinch of salt, and pepper on the prepared baking sheet. Roast for 10-12 minutes, or until tender-crisp.
  5. While asparagus roasts, heat the remaining 1 tablespoon olive oil in a large non-stick skillet over medium heat. Carefully place the tuna patties in the skillet and cook for 3-4 minutes per side, until golden brown and heated through.
  6. For the dressing, combine roasted red bell pepper, 1 clove garlic, 1 tablespoon fresh lemon juice, 1 teaspoon olive oil, a pinch of salt, and black pepper in a small food processor or blender. Blend until smooth.
  7. Serve the tuna patties with roasted asparagus, drizzled with the red pepper dressing.

Notes

Ensure canned tuna is packed in water for a lighter option and fully drained to prevent soggy patties. Almond flour acts as a binding agent and keeps the patties Whole30 compliant.
