Ingredients
- 2 can tuna (in water, drained)
- 0.25 cup mayonnaise
- 2 tablespoon red onion (chopped)
- 2 tablespoon fresh parsley (chopped)
- 1 tablespoon capers (drained and roughly chopped)
- 0.5 teaspoon dried oregano
- 0.5 lemon (juiced)
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 8 slice whole grain bread
- 4 slice provolone cheese
- 5 ounce mixed greens salad
- 2 tablespoon vinaigrette dressing
Instructions
- Preheat broiler or oven to 400 degrees Fahrenheit. In a medium bowl, flake the drained tuna. Add the mayonnaise, chopped red onion, chopped fresh parsley, capers, dried oregano, juice of 1/2 lemon, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Mix until well combined.
- Lay the whole grain bread slices on a baking sheet. Broil for 1-2 minutes, or until lightly toasted. Flip the bread over and lightly toast the other side, about 1 minute.
- Spread the tuna mixture evenly over 4 slices of the toasted bread. Top each with a slice of provolone cheese.
- Return the open-faced sandwiches to the baking sheet and broil for 2-4 minutes, watching carefully, until the cheese is melted and bubbly and the edges of the bread are golden brown.
- While the melts broil, toss the mixed greens salad with vinaigrette dressing.
- Serve the Mediterranean Tuna Melts immediately with the green salad.
Notes
If you don't have fresh parsley, you can omit it or use a pinch of dried parsley. Feel free to add a slice of tomato to the melts before broiling for extra freshness.
