Instructions

  1. Preheat broiler or oven to 400 degrees Fahrenheit. In a medium bowl, flake the drained tuna. Add the mayonnaise, chopped red onion, chopped fresh parsley, capers, dried oregano, juice of 1/2 lemon, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Mix until well combined.
  2. Lay the whole grain bread slices on a baking sheet. Broil for 1-2 minutes, or until lightly toasted. Flip the bread over and lightly toast the other side, about 1 minute.
  3. Spread the tuna mixture evenly over 4 slices of the toasted bread. Top each with a slice of provolone cheese.
  4. Return the open-faced sandwiches to the baking sheet and broil for 2-4 minutes, watching carefully, until the cheese is melted and bubbly and the edges of the bread are golden brown.
  5. While the melts broil, toss the mixed greens salad with vinaigrette dressing.
  6. Serve the Mediterranean Tuna Melts immediately with the green salad.

Notes

If you don't have fresh parsley, you can omit it or use a pinch of dried parsley. Feel free to add a slice of tomato to the melts before broiling for extra freshness.
