Ingredients
- 0.66 cup walnuts (coarsely chopped)
- 0.5 cup red onion (finely chopped)
- 0.5 cup red bell pepper (chopped)
- 10 ounce chunk tuna (water-packed)
- 15.5 ounce garbanzo beans (low sodium, drained and rinsed)
- 2 tablespoon lemon juice
- 2 tablespoon olive oil (extra virgin)
- 2 tablespoon fresh parsley (chopped)
- 4 cup romaine hearts (shredded)
Instructions
- Place walnuts, red onion, red bell pepper, fresh parsley, chunk tuna, and garbanzo beans in a large bowl and mix lightly.
- Whisk together lemon juice and olive oil and drizzle over salad; stir lightly to coat ingredients with dressing.
- Season with salt and pepper, if desired.
- Place romaine hearts on a platter or divide between 8 salad bowls.
- Top with equal amounts of salad.
