- 3 tablespoon red wine vinegar
- 0.5 teaspoon salt (for salad)
Instructions
- Prepare tuna filling: In a medium bowl, combine drained tuna, halved pitted Kalamata olives, chopped red onion, capers, 2 tablespoons fresh lemon juice, 1 tablespoon extra virgin olive oil, and 1/4 teaspoon black pepper. Mix well.
- Make white bean salad: In a separate large bowl, combine rinsed and drained cannellini beans, diced cucumber, and chopped fresh mint.
- Dress white bean salad: Whisk together 3 tablespoons red wine vinegar, 3 tablespoons extra virgin olive oil, and 1/2 teaspoon salt. Pour over the white bean and cucumber mixture and toss gently to coat.
- Assemble wraps: Arrange the separated butter lettuce leaves on a serving platter. Spoon the tuna mixture into each lettuce cup. Serve immediately with the white bean salad on the side.
Notes
You can prepare the tuna mixture and bean salad ahead of time and store them separately in the refrigerator. Assemble the wraps just before serving to keep the lettuce crisp.
