Instructions
- Heat 2 tablespoons olive oil in a large stockpot over medium heat. Add 1 diced yellow onion, 3 sliced carrots, and 3 sliced celery stalks; cook for 6 minutes until vegetables begin to soften.
- Stir in 4 minced garlic cloves, 1 1/2 teaspoons ground cumin, and 1 teaspoon ground coriander, cooking for 1 minute until fragrant.
- Add 1 1/2 cups rinsed brown lentils, 8 cups vegetable broth, 1 teaspoon salt, and 1/2 teaspoon black pepper. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 20 minutes until lentils are tender.
- Stir in 5 ounces baby spinach and cook for 2 minutes until fully wilted.
- Remove the pot from the heat and stir in 1/3 cup fresh lemon juice before serving or portioning into lunch containers.
