Mediterranean Kofta Bowls

  1. In a medium bowl, combine ground beef, finely grated yellow onion, minced garlic, 1 tablespoon chopped fresh parsley, ground cumin, paprika, dried oregano, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Mix well to combine, but do not overmix. Form into 12-16 small oblong kofta (about 1-1 1/2 ounces each).
  2. Heat olive oil in a large non-stick skillet over medium-high heat. Add kofta in a single layer and cook for 3-4 minutes per side, or until browned and cooked through. You may need to do this in batches.
  3. While kofta cooks, prepare the salad: In a small bowl, combine diced cucumber, halved cherry tomatoes, and rinsed and drained chickpeas. Drizzle with the juice from 0.5 lemon, a dash of olive oil (from your pantry), and season with a pinch of kosher salt and black pepper.
  4. Warm the pita bread according to package directions (microwave or oven).
  5. To assemble bowls, place warm pita bread on the bottom or alongside. Add cooked kofta, a generous dollop of prepared hummus, and a serving of the fresh cucumber-tomato-chickpea salad. Garnish with remaining 1 tablespoon chopped fresh parsley, if desired.

Notes

For an extra sauce, mix some Greek yogurt with a little lemon juice, garlic, and fresh mint. Kofta are also great wrapped directly in the pita with hummus and salad.
