Ingredients
- 1 pound ground beef (lean)
- 0.25 yellow onion (finely grated or minced)
- 2 clove garlic (minced)
- 2 tablespoon fresh parsley (chopped)
- 1 teaspoon ground cumin
- 0.5 teaspoon paprika
- 0.5 teaspoon dried oregano
- 0.75 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 4 pita breads (warmed)
- 1 cup prepared hummus
- 1 cucumber (diced)
- 1 cup cherry tomatoes (halved)
- 0.5 can chickpeas (rinsed and drained)
- 0.5 lemon (juiced)
Instructions
- In a medium bowl, combine ground beef, finely grated yellow onion, minced garlic, 1 tablespoon chopped fresh parsley, ground cumin, paprika, dried oregano, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Mix well to combine, but do not overmix. Form into 12-16 small oblong kofta (about 1-1 1/2 ounces each).
- Heat olive oil in a large non-stick skillet over medium-high heat. Add kofta in a single layer and cook for 3-4 minutes per side, or until browned and cooked through. You may need to do this in batches.
- While kofta cooks, prepare the salad: In a small bowl, combine diced cucumber, halved cherry tomatoes, and rinsed and drained chickpeas. Drizzle with the juice from 0.5 lemon, a dash of olive oil (from your pantry), and season with a pinch of kosher salt and black pepper.
- Warm the pita bread according to package directions (microwave or oven).
- To assemble bowls, place warm pita bread on the bottom or alongside. Add cooked kofta, a generous dollop of prepared hummus, and a serving of the fresh cucumber-tomato-chickpea salad. Garnish with remaining 1 tablespoon chopped fresh parsley, if desired.
Notes
For an extra sauce, mix some Greek yogurt with a little lemon juice, garlic, and fresh mint. Kofta are also great wrapped directly in the pita with hummus and salad.
