Ingredients
- 1.5 pound shrimp (peeled and deveined (tail-on or off))
- 2 zucchinis (medium, trimmed and chopped into 1-inch pieces)
- 1 pint cherry tomatoes
- 0.5 yellow onion (thinly sliced)
- 3 clove garlic (minced)
- 2 tablespoon olive oil
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 0.5 teaspoon red pepper flakes
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon fresh parsley (chopped)
Instructions
- Preheat your oven to 400°F. Line a large baking sheet with parchment paper.
- In a large bowl, combine the shrimp, chopped zucchini, cherry tomatoes, and thinly sliced yellow onion.
- Add the minced garlic, olive oil, dried oregano, dried thyme, red pepper flakes (if using), 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the bowl. Toss everything together until well combined and the ingredients are evenly coated.
- Spread the mixture in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes, or until the shrimp are pink and opaque and the vegetables are tender-crisp. You may need to stir halfway through cooking.
- Taste and adjust seasoning with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper as needed.
- Serve immediately, garnished with fresh parsley, if desired.
Notes
For best texture, enjoy immediately after cooking, but leftovers can be gently reheated if necessary. The shrimp may become slightly tougher when reheated.
