  1. Cook the rice: In a small saucepan, combine 2 cups water and 1 cup uncooked white rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all water is absorbed. Fluff with a fork and set aside.
  2. Prepare turkey: While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 small diced yellow onion and cook until softened, about 3 minutes.
  3. Add 1 pound ground turkey to the skillet. Break it up with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in 2 minced garlic cloves, 1 teaspoon cumin, 1/2 teaspoon coriander, and 1/2 teaspoon paprika. Season with 3/4 teaspoon salt and 1/2 teaspoon black pepper. Cook for 1 minute more until fragrant.
  5. Make the dressing: In a small bowl, whisk together 1/4 cup tahini, 2 tablespoons fresh lemon juice, 3 tablespoons water, and 1/4 teaspoon salt until smooth. Add more water if needed to reach desired consistency.
  6. Assemble bowls: Divide the cooked white rice among 4 bowls. Top each with the seasoned ground turkey, 5 ounces fresh spinach, and 1 cup halved cherry tomatoes.
  7. Drizzle generously with the lemon-tahini dressing. Garnish with 2 tablespoons chopped fresh parsley, if desired.

Notes

To toast nuts or seeds (like pine nuts or sesame seeds) for an added crunch, dry-toast them in a separate pan for a few minutes until fragrant, then sprinkle over the bowls before serving.
