Ingredients
- 1.5 pound chicken breast (boneless, skinless)
- 3 tablespoon olive oil
- 1 lemon (small, juiced and zested)
- 0.5 teaspoon dried oregano
- 0.5 teaspoon black pepper (ground)
- 5 ounce mixed greens
- 1 cucumber (large, diced)
- 1 red bell pepper (cored and diced)
- 0.25 red onion (small, very thinly sliced)
- 2 avocados (ripe, diced)
- 0.25 cup tahini
- 0.25 cup fresh parsley (chopped)
- 0.75 cup walnuts (chopped and toasted)
Instructions
- Pat the chicken breasts dry. Rub them with 1 tablespoon of olive oil, the zest of half a lemon, dried oregano, and black pepper. Preheat a grill pan or outdoor grill to medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through and no longer pink in the center. Let rest for 5 minutes, then slice.
- While the chicken grills, prepare the dressing: In a small bowl, whisk together the juice from the entire lemon, 2 tablespoons of olive oil, and 1/4 cup tahini until smooth. If the dressing is too thick, add a tablespoon or two of water until it reaches your desired consistency.
- In a large salad bowl, combine the mixed greens, diced cucumber, diced red bell pepper, thinly sliced red onion, and diced ripe avocados.
- Add the sliced grilled chicken to the salad bowl. Pour the lemon-tahini dressing over the salad and chicken, and toss gently to combine. Sprinkle with chopped fresh parsley and toasted chopped walnuts before serving.
