  1. Pat the chicken breasts dry. Rub them with 1 tablespoon of olive oil, the zest of half a lemon, dried oregano, and black pepper. Preheat a grill pan or outdoor grill to medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through and no longer pink in the center. Let rest for 5 minutes, then slice.
  2. While the chicken grills, prepare the dressing: In a small bowl, whisk together the juice from the entire lemon, 2 tablespoons of olive oil, and 1/4 cup tahini until smooth. If the dressing is too thick, add a tablespoon or two of water until it reaches your desired consistency.
  3. In a large salad bowl, combine the mixed greens, diced cucumber, diced red bell pepper, thinly sliced red onion, and diced ripe avocados.
  4. Add the sliced grilled chicken to the salad bowl. Pour the lemon-tahini dressing over the salad and chicken, and toss gently to combine. Sprinkle with chopped fresh parsley and toasted chopped walnuts before serving.
