Ingredients
- 1.5 pound shrimp (large, peeled and deveined, tails removed)
- 2 tablespoon olive oil (extra virgin)
- 4 clove garlic (minced)
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon ground black pepper
- 8 ounce baby spinach (rinsed and dried)
- 1 lemon (juiced)
- 0.5 cup feta cheese (crumbled)
- 2 tablespoon fresh parsley (finely chopped)
Instructions
- Pat the shrimp dry with paper towels. In a bowl, toss the shrimp with dried oregano, half of the salt (1/4 teaspoon), and all of the ground black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add half of the minced garlic and sauté for 30 seconds until fragrant.
- Add the seasoned shrimp in a single layer and sear without moving for 2 minutes, then flip and cook 1 to 2 minutes more until pink, opaque, and cooked through to an internal temperature of 145°F. Transfer the shrimp to a warm plate.
- In the same skillet over medium heat, add the remaining 1 tablespoon of olive oil and the rest of the minced garlic. Stir for 30 seconds, then add the baby spinach and the remaining 1/4 teaspoon salt. Toss continuously for 2 minutes until the spinach is just wilted and tender.
- Remove the skillet from the heat, squeeze the fresh lemon juice over the spinach, and divide the greens evenly across four plates.
- Top the wilted spinach with the seared shrimp, scatter crumbled feta cheese and chopped fresh parsley over each portion, and serve immediately.
Notes
Tails can be left on for presentation or removed prior to cooking for easier family dining.
