  1. In a bowl, combine 6 ounces boneless, skinless chicken breast cubes, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/4 teaspoon black pepper, and the juice from 1/2 lemon. Toss to coat and let marinate for at least 10 minutes (or during prep time).
  2. While chicken marinates, thread the chicken cubes, 1/2 yellow bell pepper pieces, and 1/2 zucchini pieces alternately onto 2 soaked bamboo skewers.
  3. Heat 1 teaspoon olive oil in a large non-stick skillet over medium-high heat for 1 minute. Add the skewers and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender-crisp.
  4. Serve immediately.
