Ingredients
- 6 ounce boneless, skinless chicken breast (cut into 1-inch cubes)
- 1 teaspoon olive oil
- 0.5 yellow bell pepper (cut into 1-inch pieces)
- 0.5 zucchini (cut into 1-inch pieces)
- 1 teaspoon dried oregano
- 0.5 teaspoon garlic powder
- 0.25 teaspoon black pepper (freshly ground)
- 0.5 lemon (for juice)
- 2 bamboo skewers (soaked)
Instructions
- In a bowl, combine 6 ounces boneless, skinless chicken breast cubes, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/4 teaspoon black pepper, and the juice from 1/2 lemon. Toss to coat and let marinate for at least 10 minutes (or during prep time).
- While chicken marinates, thread the chicken cubes, 1/2 yellow bell pepper pieces, and 1/2 zucchini pieces alternately onto 2 soaked bamboo skewers.
- Heat 1 teaspoon olive oil in a large non-stick skillet over medium-high heat for 1 minute. Add the skewers and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender-crisp.
- Serve immediately.
