  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1/2 pound chicken breast cubes and cook for 5-7 minutes, stirring, until browned and cooked through. Season with a pinch of kosher salt and black pepper. Remove chicken from skillet and set aside.
  2. While chicken cooks, bring 1 1/2 cups vegetable broth to a boil in a small saucepan. Add 1/2 cup orzo pasta and cook according to package directions, about 8-10 minutes, until al dente. Drain well.
  3. In a large bowl, combine the cooked chicken, drained orzo, 1 cup cherry tomatoes, and 2 cups fresh spinach.
  4. In a small bowl, whisk together 2 tablespoons lemon juice, 1 tablespoon fresh parsley, the remaining 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper.
  5. Pour the dressing over the chicken and orzo mixture and toss to combine. Serve immediately, garnished with 1/4 cup crumbled feta cheese if desired.

Notes

For best results, consume within one day as the spinach can wilt and orzo can absorb all dressing if stored longer. For meal prep, keep dressing separate until serving.
