Mediterranean Chicken & Couscous Toss

Tender chicken breast strips sautéed with grape tomatoes, cucumber, red onion, and instant couscous, dressed in a light lemon-herb vinaigrette.

  1. Bring chicken broth to a boil in a medium saucepan. Add instant couscous, stir, cover, and remove from heat. Let stand for 5 minutes, then fluff with a fork.
  2. While couscous cooks, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add thinly sliced chicken breast. Season with dried oregano, garlic powder, salt, and black pepper. Cook until chicken is cooked through and lightly browned, about 5-7 minutes.
  3. In a large bowl, combine the cooked couscous, cooked chicken, halved grape tomatoes, diced cucumber, and finely diced red onion.
  4. Squeeze lemon juice over the mixture and add chopped fresh parsley and crumbled Parmesan cheese. Toss gently to combine. Serve warm or at room temperature.

Notes

This dish is also delicious chilled as a salad, making it excellent for packed lunches. For an extra burst of flavor, add a pinch of red pepper flakes.
