Instructions
- Pat chicken bites dry with paper towels. Season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon dried oregano, and 1/2 teaspoon garlic powder.
- Heat a large non-stick skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
- Add trimmed green beans and 1/4 cup low-sodium chicken broth to the same skillet. Cover and steam for 5-7 minutes, until green beans are tender-crisp.
- Uncover the skillet, increase heat to medium-high. Add the cooked chicken, black olives, and chopped dry-packed sun-dried tomatoes. Sauté for 2-3 minutes, stirring to combine and heat through.
- Serve immediately.
