Mediterranean Beef Pitas

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 chopped yellow onion and cook until softened, about 3-4 minutes.
  2. Add 2 3/4 pounds lean ground beef to the skillet. Break it apart with a spoon and cook until browned, about 5-6 minutes. Drain any excess fat.
  3. Stir in 4 minced garlic cloves, 1 teaspoon dried oregano, 1 teaspoon dried mint, and 1/2 teaspoon kosher salt. Cook for 1 minute more until fragrant.
  4. Stir in 1/4 cup fresh lemon juice. Remove from heat.
  5. Prepare the yogurt sauce: In a small bowl, combine 1/2 cup dairy-free unsweetened plain yogurt and 1 tablespoon chopped fresh dill.
  6. Warm the 18 whole wheat pita breads according to package instructions. Arrange 2 diced cucumbers and 1 pint halved cherry tomatoes on the side.
  7. Serve the seasoned ground beef in the warm pita breads, topped with diced cucumber, halved cherry tomatoes, and a drizzle of the dairy-free yogurt sauce. Assemble at the table for a quick weeknight meal.

Notes

Using 90/10 lean ground beef minimizes fat content while maximizing protein. You can prep the cucumber and tomatoes ahead of time to save precious minutes.
