Ingredients
- 1 pound lean ground beef (96% lean)
- 1 tablespoon olive oil (extra virgin)
- 12 ounce green beans (trimmed and cut into 2-inch pieces)
- 1 red bell pepper (medium, thinly sliced)
- 3 clove garlic (minced)
- 1 teaspoon dried oregano
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper (freshly cracked)
- 1 tablespoon lemon juice (freshly squeezed)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add green beans and red bell pepper with 2 tablespoons of water, cover, and steam-sauté for 4 to 5 minutes until tender-crisp.
- Push the vegetables to the outer edges of the pan and add the lean ground beef to the center. Cook, breaking up with a wooden spoon, for 5 to 6 minutes until browned and cooked through to an internal temperature of 160°F.
- Add minced garlic, dried oregano, kosher salt, and black pepper. Stir everything together in the skillet and cook for 1 to 2 minutes until fragrant.
- Remove skillet from heat, drizzle fresh lemon juice over the mixture, toss gently to combine, and serve warm.
