- 4 cod fillets
- 1.5 pound collard greens (stemmed and chopped)
- 4 clove garlic (minced)
- 2 tablespoon lemon juice (freshly squeezed)

Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Place the chopped collard greens on one side of the baking sheet. Drizzle with 1 tablespoon of lemon juice, 2 cloves minced garlic, 1 teaspoon dried oregano, and a pinch of black pepper. Toss to combine.
- Place the cod fillets on the other side of the baking sheet. Drizzle with the remaining 1 tablespoon lemon juice. Sprinkle each fillet with the remaining 1 teaspoon dried oregano, 1 teaspoon dried parsley, 2 cloves minced garlic, and remaining black pepper.
- Bake for 12-15 minutes, or until the cod is flaky and cooked through and the collard greens are tender. Serve immediately.
Notes
Ensure the cod is not overcooked to maintain its delicate texture. Fresh herbs can be used for a stronger flavor if desired, simply double the quantity.
