Instructions
- Trim any silver skin from the pork loin. In a shallow dish, whisk together 2 tablespoons olive oil, red wine vinegar, 4 cloves minced garlic, 1 teaspoon smoked paprika, dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper. Add the pork loin and turn to coat completely. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
- For the Patatas Bravas: Preheat oven to 400°F. Peel and cut 2 pounds Russet potatoes into 1-inch cubes. Rinse them well under cold water and pat very dry. Toss with 1/4 cup olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread in a single layer on a baking sheet and roast for 30-40 minutes, flipping halfway through, until golden brown and crispy.
- For the Piquillo Pepper Sauce: While pork and potatoes cook, combine drained piquillo peppers, 1 small minced shallot, 1 tablespoon lemon juice, 1/4 teaspoon cayenne pepper, 2 tablespoons extra virgin olive oil, and 1/4 cup chicken broth in a blender or food processor. Blend until very smooth. Taste and adjust seasoning as needed.
- For the Bravas Sauce (optional, but traditional): In a small bowl, whisk together 2 tablespoons tomato paste, 1/2 cup mayonnaise, 1 teaspoon hot sauce, 1/4 teaspoon smoked paprika, and a pinch of salt until well combined.
- Heat a large oven-safe skillet (cast iron works well) over medium-high heat. Remove pork loin from marinade (discard marinade) and sear on all sides until deeply browned, about 2-3 minutes per side. For a 1.5-pound loin, this will take about 8-10 minutes total.
