Ingredients
- 1 pound salmon (cubed)
- 4 tablespoon maple syrup
- 3 teaspoon dijon mustard
- 2 clove garlic clove (minced)
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 0.5 teaspoon sea salt
- 0.25 teaspoon cayenne pepper
- 0.125 teaspoon black pepper
- 1 cup jasmine rice (cooked)
- 0.5 cup edamame
- 0.5 cup carrot (shredded)
- 0.5 avocado
- 2 tablespoon green onion
- 1 teaspoon sesame seeds
Instructions
- Start by cubbing your salmon.
- In a bowl, combine 3 tablespoons maple syrup, 2 teaspoons dijon mustard, 2 minced garlic cloves, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon sea salt, and a dash of black pepper. Mix to combine with salmon cubes.
- Mix together a small dish with 1 tablespoon maple syrup, 1 teaspoon dijon mustard and a dash of all of the seasonings. This is what you'll use to drizzle on top.
- Let the salmon sit in the marinade for 15 minutes.
- Add the salmon to the air fryer and cook at 390 degrees Fahrenheit for 8-9 minutes, flipping halfway through.
- In a bowl, combine cooked jasmine rice, shredded carrots, edamame, and avocado.
- Add salmon cubes on top.
- Top with green onion and sesame seeds.
- Drizzle with maple mustard on top. Enjoy!
Notes
The salmon makes enough for 2 bowls. While these bowls are best enjoyed after making, they can be reheated for leftovers. You can also cook the salmon on the stove top in a cast iron skillet for extra crisp. If you don't want to make rice bowls, you can serve the salmon on top of quinoa or a salad.
