Ingredients
- 2 boneless pork chops (boneless, about 6 ounces each)
- 0.75 teaspoon kosher salt
- 0.375 teaspoon black pepper
- 2 tablespoon olive oil
- 1 sweet potato (large, peeled and diced into 1/2-inch cubes)
- 2 cup fresh green beans (trimmed)
- 0.25 cup maple syrup
- 2 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic (minced)
Instructions
- Preheat oven to 400°F (200°C). On a baking sheet, toss diced sweet potato with 1 tablespoon olive oil, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper. Roast for 15-20 minutes, or until tender and lightly browned, flipping halfway.
- While sweet potatoes roast, season pork chops with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
- In a separate bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, and 1 teaspoon minced garlic for the sauce.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side, until golden brown and cooked through (internal temperature 145°F).
- Reduce heat to low and pour the maple mustard sauce over the pork chops. Simmer for 1-2 minutes, spooning sauce over the chops, until slightly thickened. Remove from heat and set pork chops aside.
- Add green beans to the skillet (you can add a splash of water if needed) and sauté for 5-7 minutes, until crisp-tender. Season with a pinch of salt if desired.
- Serve the maple mustard pork chops with roasted sweet potatoes and sautéed green beans.
Notes
Ensure pork chops are not overcooked to keep them tender and juicy. The sauce can be made ahead of time.
