Ingredients
- 1.5 pound pork loin roast
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup maple syrup
- 2 tablespoon Dijon mustard
- 1.5 pound red potatoes (cut into 1-inch pieces)
- 1 pound Brussels sprouts (trimmed and halved)
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together the maple syrup and Dijon mustard for the glaze. Set aside.
- Pat the pork loin roast dry with paper towels. Season all over with dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- In a large roasting pan or baking sheet, toss the red potatoes and Brussels sprouts with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Arrange them in a single layer.
- Place the seasoned pork loin on the same pan with the vegetables. Roast for 20 minutes.
- After 20 minutes, brush the pork loin with half of the maple-Dijon glaze. Stir the vegetables. Return to the oven and roast for another 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C) and the vegetables are tender and lightly browned. Brush the remaining glaze on the pork during the last 5 minutes of cooking.
- Remove the pork from the oven, tent with foil, and let rest for 5-10 minutes before slicing. Serve the sliced pork with the roasted vegetables.
