  1. Combine brown jasmine rice and water in a saucepan over medium-high heat, bring to a boil, then cover tightly, reduce heat to low, and cook for 35 minutes until fluffy.
  2. Heat avocado oil in a wide skillet or shallow braiser over medium heat; sauté minced garlic and matchstick ginger for 2 minutes until aromatic.
  3. Pour in low-sodium vegetable broth, unsweetened tamarind puree, salt, and black pepper, stirring well to incorporate.
  4. Add sliced daikon radish and shelled edamame to the broth; bring to a simmer and cook for 5 minutes.
  5. Nestle salmon portions and halved baby bok choy into the simmering broth. Cover and gently poach on low heat for 8 to 10 minutes until salmon flakes easily and reaches an internal temperature of 145°F.
  6. Divide the warm brown rice among shallow dinner bowls, then spoon over the poached salmon, vegetables, and ginger broth.
