Ingredients
- 1 tablespoon vegetable oil
- 0.5 cup onion (chopped)
- 2 cup frozen vegetables (frozen, no salt added)
- 1 cup low-fat cheddar cheese (shredded)
- 3 eggs
- 1.5 cup 1% milk (1%)
- 0.75 cup baking mix
Instructions
- Cook onion in vegetable oil (or cook with vegetables).
- Cook frozen vegetables (or use leftovers).
- Drain well.
- Grease round pie pan or 8x8 inch baking dish.
- Spread cooked vegetables in pan.
- Spread low-fat cheddar cheese on top of vegetables.
- Mix 1% milk, eggs, and baking mix.
- Pour over vegetables and cheese.
- Bake at 350 °F for 35 minutes, until a safe internal temperature has been reached and a knife inserted into the middle comes out clean.
Notes
Suggest preparing with frozen broccoli (shown) or spinach.
